Leslie’s Blueberry Cobbler

Autumn makes many individuals concentrate on consuming more vegetables, particularly as components of soups, but what about feasting on fruits, too? Blueberries, while receiving ample summer publicity, are an any-time-of-year delight and take top billing in this submission from Leslie McLaughlin.

The East Passyunk Crossing resident noted “This is a really simple, yet tasty, dessert.” As we prepare to part with yet another month and anticipate enhanced desires for baked goods as the holidays approach, consider calling on this recipe to sate tummies and temperaments.

Ingredients:

1/2 stick of unsalted butter, melted

2 cups of all-purpose flour

3 teaspoons of baking powder

1 teaspoon of salt

1/2 cup of sugar

1–1/2 cups of milk

2 cups of fresh blueberries

1/3 cup of water

Directions:

Preheat oven to 350 degrees.

Pour the melted butter into a shallow 1–½ quart baking dish. In a mixing bowl, combine the flour, baking powder, salt, sugar, and milk, and pour the mixture evenly over the butter. Place the berries, water, and sugar in a bowl, and spoon the contents evenly over the batter, but do not stir. Bake for 40 to 45 minutes. The batter will rise to produce a buttery top crust. SPR
