December can get pretty busy very quickly. After a tough day of work and spending some time purchasing holidays gifts, Marie Regalbuto’s Oven Chicken and Potatoes is the perfect way to still have a home-cooked meal during these hectic days.
The resident of the 1300 block of South Fairhill Street’s meal takes less than an hour to bake. Just pop the bird in the oven and there is still time to wrap a few presents before dinner is ready. SPR
Ingredients:
1 small onion, chopped
2 tablespoons of olive oil
1 garlic clove, chopped
1 teaspoon of basil
1/2 teaspoon of oregano
1 teaspoon of salt and pepper
5 potatoes, peeled and cut into small wedges
5 carrots, peeled and cut
1 chicken, quartered (or just thighs or breast)
Directions:
Preheat the oven to 350 degrees.
Mix all of the ingredients together except the chicken and place the mixture in a roasting pan. Lay the chicken on top and bake for 45 minutes.
