Baked Macaroni and Cheese with Tomato Sauce, contributed by Debbie Robb of the 300 block of Mercy Street, might give the impression of a gourmet meal -- with its cheesy topping and warm-baked pasta -- but it's actually a delicious opportunity to make something quick and easy. To really wow the table -- without exhausting yourself -- pair the dish with a Caesar Salad, a simple and light touch to any home-cooked meal.
Baked Macaroni and Cheese with Tomato Sauce
Ingredients:
1 box of elbow pasta, cooked according to package directions
1 pound of white, sharp cheddar, grated, plus more for topping
1 (15-ounce) can of tomato sauce
Salt and pepper, to taste
Directions:
Preheat the oven to 350 degrees.
Mix the cheese and pasta thoroughly.
Add the tomato sauce, salt and pepper.
Top with additional cheese.
Bake, uncovered, for 30 minutes, or until the cheese melts.

“My mother got this recipe from her mother who used to make it for lent because it was a tasty, meatless dish.
We loved as children! We love it as adults! And now our kids love it too!
A couple of tips to ensure the most zest! Use Cracker Barrel Extra Sharp cheese and use only Hunts for the tomato sauce! Also, cook the elbows el dante so they don't turn to mush in the oven. Enjoy!”
