Who says eggs are purely for breakfast? A German concoction, which was later popularized in France, quiche is versatile as it can be served for any meal and even a tasty snack. Aida Kearns’ Spinach or Broccoli Quiche, is one of many varieties of the tasty delicacy.
The resident of the 2700 block of South 17th Street allows you to decide between the two vegetables or maybe whip in a little of each for an even greener dish. SPR
Ingredients:
4 eggs, beaten
1/2 cup of cheese of your choice
1 small onion, chopped
1 garlic clove, chopped
1 cup of Bisquick
1/2 cup of oil
1 10-ounce box of frozen spinach or broccoli, defrosted and chopped
Directions:
Preheat the oven to 350 degrees.
Mix all of the ingredients well.
Bake in a greased 9-by-9-inch pan for 45 minutes or until done.
