Belly warmer
On days when it actually feels like winter, a warm meal after braving the cold seems like the way to go. Artrina Lindsay’s Tortellini Soup, filled with cheese-stuffed noodles and a large serving of vegetables, keeps its devourers toasty and healthy.
The resident of the 2100 block of South Hancock Street enjoys its warming effects, but also likes to distribute her soup to others. Those not lucky enough to receive her gift, can now prepare the steamy meal for themselves. SPR
Ingredients:
1 pound of sweet Italian sausage
5 cups of beef broth
1/2 cup of water
1/2 cup of red wine
1 cup of onions, minced
3 cloves of garlic, chopped
1/2 cup of carrots, sliced
2 cups of tomatoes, peeled and crushed
1/2 teaspoon of oregano
8 ounces of tomato sauce
1 1/2 cups of zucchini, sliced
1 16-ounce package of cheese tortellini
1 cup of mushrooms, sliced
1 cup of cabbage, shredded
Directions:
Sauté the sausage until brown. Remove its skin. Combine the sausage with the broth, water and wine. Bring to a boil. Reduce the heat and simmer for 30 minutes.
Add the remaining ingredients and cook covered for one hour.
