Pasta is the loved-by-all, classic Italian dish that can be manipulated into infinite interpretations, but it requires the most savory and freshest ingredients to create the perfect meal. Christina Pullo’s version is a Pasta Shells with Tomatoes.
The resident of the 2500 block of South 10th Street takes a simple pasta and renovates it into a unique meal. Get your ingredients ready, because a pasta dish has never tasted this delicious and been so easy to make. SPR
Ingredients:
1 box of medium pasta shells, cooked according to package directions
2 cups of cherry or grape tomatoes
2 small red or yellow bell peppers, diced
1/2 cup of olive oil
2 tablespoons of wine vinegar
Salt and pepper, to taste
1/2 cup of ricotta cheese
Directions:
In a large mixing bowl, mix all of the ingredients except for the pasta and ricotta.
Add the mixture to the pasta and mix.
Top with the ricotta.
