Cranberry isn’t always the headlining fruit at the Thanksgiving table. The pilgrims may not have had pineapples, but it always finds its way on to David Cifone’s menu.
The 12th-and-Reed-streets native makes this sweet and tangy casserole for his family every year. In fact, his relatives crave it regularly. Ingredients:
1 9-by-13-inch glass casserole dish, greased
2 sticks of salted butter, softened
2 cups of granulated sugar
8 large eggs
1 teaspoon of vanilla extract
13 slices of white bread, cubed
2 20-ounce cans of crushed pineapple, drained
Directions:
Preheat the oven to 350 degrees.
In a large bowl, beat the butter and sugar together until fluffy. While beating on low, add the vanilla extract and eggs one at a time until mixed. Use a large spoon to stir the pineapples into the mixture. Fold in the bread cubes and mix well.
Pour the mixture into the casserole dish and bake for one hour, or until golden brown.
Makes about 12 to 15 servings. Serve warm, but it also tastes great cold.
