Whether it’s just a quick meal or an easy dish for last-minute Sunday football guests, Dolores Collins’ Shortcut Chili really lives up to its name.
The resident of the 2100 block of South Hancock Street has ditched the Crock-Pot to reduce the waiting game for the spices to simmer. The finished product can be served with sour cream, shredded cheddar, or used to top nachos for a great game-day dish that can be ready before kickoff. SPR
Ingredients:
1-1/2 pounds of lean ground beef
2 teaspoons of chili powder
16-ounce jar of mild or medium salsa
15-ounce can of kidney beans (with liquid)
1 cup of water
Salt and pepper, to taste
Directions:
In a skillet, brown the ground beef and chili powder on high. Stir in the salsa, beans and water. Reduce the heat to medium and simmer for 10 minutes. Season with the salt and pepper.
