Mardi Gras is just around the corner, and what better way to celebrate than with sweets. With sugar galore, Donna Collins’ Chocolate Chip Oatmeal Cookies are perfect with a tall glass of milk for this festive food celebration. Treat your taste buds to a rambunctious fete before Lent kicks off Wednesday.
The resident of the 100 block of Snyder Avenue recommends using a large spoon when dropping the dough to make larger cookies, and baking for a minute or two longer. SPR
Ingredients:
3/4 cup of shortening
1 cup of brown sugar
1/2 cup of sugar
1/4 cup of water
1 egg
1 teaspoon of vanilla
1 cup of flour
1/2 teaspoon of baking soda
1 teaspoon of salt
1 cup of chocolate chips
1 cup of walnuts or pecans, chopped
3 cups of quick oats
Directions:
Preheat the oven to 350 degrees.
Cream the first six ingredients until fluffy. Sift the flour, baking soda and salt together and add to the wet ingredients, mixing well. Add the chocolate chips and nuts. Mix well. Then add the oats and stir until incorporated. Drop the mixture onto a greased cookie sheet and bake for about 12 minutes, until the tops are golden.
