Joseph Russo, like many others, craves a hearty Italian sandwich on a Saturday afternoon or evening. But when the native of 21st and McClellan streets prepares his Sausage Medley, he knows there is a very good chance things could get a little messy.
The offering has been shared through the years with his friends and family, and the Aldan resident, now is passing it on for all of South Philly to enjoy. For those fearing the idea of a steadily dripping sandwich, just have plenty of napkins nearby and savor every bite.
2 pounds of Italian (sweet or hot) sausage
8 Italian rolls
1 sweet onion, sliced
Enough oil to coat the bottom of a pan
1 or 2 green bell peppers, sliced
Salt and pepper, to taste
White button mushrooms, to taste, sliced
Tomato sauce, to taste
Sauté and brown the sausage in a large pan or skillet until done. Remove sausage from the pan and either keep at hot dog-length or cut into 1-inch pieces. Pour the oil in the pan and sauté the onions and peppers until translucent and soft. Add the mushrooms and sausage and stir. Mix in the tomato sauce.
Heat the mixture thoroughly, add the salt and pepper and serve on rolls.
