It’s the heart of fishing season, but there is an easy solution for those who get a little queezy on the open seas. Instead of rocking back and fourth on a boat, push a shopping cart down to the supermarket’s fish aisle and reel in some haddock or flounder fillets. Toss in a few seasonings and you’re ready to bake Leslie McLaughlin’s Easy Fish Dinner.
The resident of the 1300 block of Castle Avenue whips up this easy-to-prepare recipe in less than an hour. Besides living up to its billing, she hopes others find this dish as tasty as she does. SPR
Ingredients:
1 pound of haddock or flounder fillets
1/2 teaspoon of pepper
1/4 teaspoon of oregano
1/2 teaspoon of parsley flakes
1 can of cream of celery soup
Directions:
Preheat the oven to 375 degrees.
Place the fish in a greased baking dish. Sprinkle the fish with the seasonings. Pour on and spread the undiluted celery soup. Bake for 40 minutes.
