Roberta’s Sugarless Rice Pudding

These days many people are counting calories, their sugar intake, and, as always, their weight, especially during the holidays. Roberta Kubiak’s Sugarless Rice Pudding is a quick treat with all of the sweetness, but without the extra calories.

The resident of the 2100 block of South Hancock Street’s creamy snack prepared using a sugar substitute is perfect for dessert or a midday pick-me-up. And the days following the big meal, a light treat may be in order. SPR

Ingredients:

4 cups of 2 percent milk
2 9-ounce packages of sugar-free instant vanilla pudding mix
1 teaspoon of vanilla
1 bag of white Success Rice, cooked according to package directions
Dry sugar substitute equal to 2/3 cups of sugar

Directions:

In a medium bowl, stir the milk and pudding mix together until smooth. Add the vanilla and sugar substitute. Fold in the rice. Refrigerate until served.
