With that cold blast of winter lurking on the other side of the front door, going out seems like a bad idea. After spending what seemed like a never-ending eights hours at work, preparing a time-consuming meal is too much to handle. Luckily, Theresa Strati’s Ziti with Sausage doesn’t require spending all night by the stove.
The resident of the 2500 block of South Juniper Street tosses the pasta and the creamy sauce with sausage together and tops her yummy masterpiece with a little Parmesan.
8 ounces of sweet Italian
sausage, skin removed
1/2 tablespoon of onion, chopped
1 tablespoon of olive oil
1/2 tablespoon of butter
1 cup of heavy cream
1/4 teaspoon of salt
1/8 teaspoon of pepper
Small pinch of nutmeg
3/4 pound of ziti, cooked according to package directions
1/2 cup of grated Parmesan
In a large saucepan, sauté the onions with the oil and butter until they are soft and golden. Add the sausage, crumbling it with a fork, sauté and add to the saucepan. Stir often for 10 minutes. Stir in the cream, salt, pepper and nutmeg. Continue cooking until the cream mixture thickens, for about five minutes.
Drain and transfer the ziti to a warm dish and toss it with the sauce. Top with the Parmesan.
Makes four servings.
